Five generations of prosciuttificio in the hills behind Parma. Black-pig hams, twenty-four-month minimum cure, no additives. Verde has bought from the Cinotti family for thirty-six years; the original certificate is still on the shop wall.

Three generations of sheep-cheese in the Val d'Orcia. Pecorino aged eight to twenty-four months, plus a winter ricotta that arrives by airfreight one week each year and never lasts more than three days on the counter.

Bologna's last family-owned mortadella house. Whole pistachio, garlic, peppercorn, no MSG, no shortcuts. Sliced from the wheel — Verde has never sold pre-packed mortadella in thirty-six years, and is not about to start.

Carlo Greco, still slicing the prosciutto.

Carlo arrived from Modena in 1985, opened on Norton Street in 1989, and has stood behind the slicer six days a week ever since. His daughter, Elena, manages the back of house, the imports paperwork, and the Saturday-morning espresso machine. His son, Gianni, does the deliveries.

Most of the four supplier families — Cinotti, Fiore, Pasini, Mancini — were chosen by Carlo's father in Modena before the shop even opened. They have not been changed since 1989. Verde does not stock anything from Costco. Verde will not be stocking anything from Costco.

The slicer goes on at half past seven.

The shop opens Tuesday through Sunday. Carlo is in every morning, six days a week. Special-order whole prosciutti, parmigiano halves, and big bottles of last-October's olio are by phone twenty-four hours in advance.
